- ½ cucumber chopped
- 2 medium tomatoes chopped
- ½ yellow bell pepper chopped
- ½ onion sliced
- 50 grams Bulgarian feta cheese Sirene crumbled
- 2 tbsp white vinegar
- 2 tbsp olive oil
- salt and pepper
- 1 small bunch flat leaf parsley
Chop tomatoes, cucumber, bell pepper and onion in bite size chunks.
For the dressing combine olive oil, vinegar, salt and pepper.
Toss the vegetables with the dressing and let rest for 15 minutes.
Crumble the feta cheese on top of the salad and garnish with parsley!
