Bulgarian Shopska Salad

Ingredients

  • ½ cucumber chopped
  • 2 medium tomatoes chopped
  • ½ yellow bell pepper chopped
  • ½ onion sliced
  • 50 grams Bulgarian feta cheese Sirene crumbled
  • 2 tbsp white vinegar
  • 2 tbsp olive oil
  • salt and pepper
  • 1 small bunch flat leaf parsley

Instructions

  • Chop tomatoes, cucumber, bell pepper and onion in bite size chunks.
  • For the dressing combine olive oil, vinegar, salt and pepper.
  • Toss the vegetables with the dressing and let rest for 15 minutes.
  • Crumble the feta cheese on top of the salad and garnish with parsley!
