Heat vegetable oil in a large skillet over medium heat.
Add chopped onion and minced garlic, cook for 2-3 minutes until onion is translucent.
Add ground beef, cook and break it up until browned and cooked through.
Stir in diced potatoes, tomato sauce, beef broth (or water), cumin, paprika, salt, and black pepper.
Bring mixture to a boil, reduce heat to low, cover skillet, and simmer for 20-25 minutes until potatoes are tender.
Remove skillet from heat and garnish with chopped cilantro if desired.
Serve warm with rice, tortillas, or your favorite side dish.
