Ingredients

  • 1 lb ground beef
  • 2 medium potatoes peeled and diced
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ½ cup tomato sauce
  • ½ cup beef broth or water
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Fresh cilantro chopped (optional, for garnish)

Instructions

  • Heat vegetable oil in a large skillet over medium heat.
  • Add chopped onion and minced garlic, cook for 2-3 minutes until onion is translucent.
  • Add ground beef, cook and break it up until browned and cooked through.
  • Stir in diced potatoes, tomato sauce, beef broth (or water), cumin, paprika, salt, and black pepper.
  • Bring mixture to a boil, reduce heat to low, cover skillet, and simmer for 20-25 minutes until potatoes are tender.
  • Remove skillet from heat and garnish with chopped cilantro if desired.
  • Serve warm with rice, tortillas, or your favorite side dish.
