Chicken With Tomatoes & Spinach

- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 cup cherry tomatoes halved
- 1 cup baby spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp dried basil
- ½ tsp dried oregano
- ¼ tsp crushed red pepper flakes optional
Season chicken with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side, then set aside.
In the same skillet, cook diced onion for 2-3 minutes. Add minced garlic and cook for 1 minute.
Add cherry tomatoes and cook for 3-4 minutes.
Stir in baby spinach and cook for 1-2 minutes.
Pour in heavy cream and simmer for 2-3 minutes.
Add Parmesan cheese, dried basil, dried oregano, and crushed red pepper flakes (if using). Cook for 1-2 minutes.
Return chicken to skillet and cook for 2-3 minutes.
Serve over rice, pasta, or with crusty bread.
