Chicken With Tomatoes & Spinach

Ingredients

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup baby spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper flakes optional

Instructions

  • Season chicken with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side, then set aside.
  • In the same skillet, cook diced onion for 2-3 minutes. Add minced garlic and cook for 1 minute.
  • Add cherry tomatoes and cook for 3-4 minutes.
  • Stir in baby spinach and cook for 1-2 minutes.
  • Pour in heavy cream and simmer for 2-3 minutes.
  • Add Parmesan cheese, dried basil, dried oregano, and crushed red pepper flakes (if using). Cook for 1-2 minutes.
  • Return chicken to skillet and cook for 2-3 minutes.
  • Serve over rice, pasta, or with crusty bread.
