Chilean Beef Cazuela

Ingredients

  • 1.5 lbs beef chuck cut into 1-inch cubes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 large carrots chopped
  • 2 large potatoes peeled and chopped
  • ½ cup fresh or frozen corn kernels
  • ½ cup fresh or frozen green beans chopped
  • ¼ cup long-grain white rice
  • 4 cups beef broth
  • ½ cup white wine optional
  • 1 tablespoon vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Instructions

  • Heat oil in a large pot over medium heat. Brown beef cubes for 5 minutes. Remove and set aside.
  • Add onion, garlic, red and green bell peppers to the pot. Cook for 5 minutes.
  • Return beef to pot. Add oregano, cumin, salt, and pepper. Cook for 2 minutes.
  • Add beef broth and white wine (if using). Bring to a boil, then reduce heat, cover, and simmer for 1 hour.
  • Add carrots, potatoes, corn, green beans, and rice. Stir, cover, and simmer for 30 minutes.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve hot, garnished with chopped parsley.
