- 1 lb beef cubed
- 2 cups diced pumpkin
- 2 cups diced potatoes
- 1 cup corn kernels
- 1 cup chopped green beans
- 1 large onion chopped
- 2 cloves garlic minced
- 1 cup beef or vegetable broth
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper
- Cilantro or parsley for garnish
Heat oil in a large pot over medium heat. Cook onion and garlic for 5 minutes.
Add beef and cook until browned, about 5-7 minutes.
Stir in paprika, cumin, salt, and pepper. Cook for 1 minute.
Add pumpkin, potatoes, corn, green beans, and broth. Stir well.
Bring to a boil, then simmer for 30-40 minutes until vegetables are tender and beef is cooked.
Adjust seasoning with salt and pepper.
Serve hot, garnished with cilantro or parsley.
