Ingredients

  • 1 lb beef cubed
  • 2 cups diced pumpkin
  • 2 cups diced potatoes
  • 1 cup corn kernels
  • 1 cup chopped green beans
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup beef or vegetable broth
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper
  • Cilantro or parsley for garnish

Instructions

  • Heat oil in a large pot over medium heat. Cook onion and garlic for 5 minutes.
  • Add beef and cook until browned, about 5-7 minutes.
  • Stir in paprika, cumin, salt, and pepper. Cook for 1 minute.
  • Add pumpkin, potatoes, corn, green beans, and broth. Stir well.
  • Bring to a boil, then simmer for 30-40 minutes until vegetables are tender and beef is cooked.
  • Adjust seasoning with salt and pepper.
  • Serve hot, garnished with cilantro or parsley.
