Chilean Pastel de Choclo

Ingredients

  • 6 cups corn kernels
  • 1 cup milk
  • 1 cup chopped basil leaves
  • 2 tbsp sugar
  • Salt and pepper
  • 3 tbsp butter
  • 2 chopped onions
  • 2 minced garlic cloves
  • 1 lb ground beef
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • ½ cup chopped black olives
  • ½ cup raisins
  • 2 sliced hard-boiled eggs
  • 1 cup powdered sugar optional

Instructions

  • Preheat oven to 350°F (180°C).
  • Blend corn, milk, basil, sugar, salt, and pepper until smooth.
  • Melt butter in a skillet. Cook onions and garlic until soft.
  • Add ground beef to skillet. Cook until browned. Season with cumin, paprika, oregano, salt, and pepper.
  • Stir in olives and raisins. Cook for 5 minutes.
  • Spread beef mixture in a 9x13-inch baking dish. Arrange sliced eggs on top.
  • Pour corn mixture over beef and eggs.
  • Bake for 45 minutes, or until golden brown and set.
  • Optionally, sprinkle with powdered sugar before serving.
