- 1 large red bell pepper
- ½ cup sour cream
- ½ cup mayonnaise
- 2 cloves garlic minced
- 1 tbsp fresh lemon juice
- 1 tsp smoked paprika
- ½ tsp ground cumin
- Salt and pepper to taste
Cut red bell pepper in half, remove seeds and stem, and slice into thin strips.
Combine red bell pepper, sour cream, mayonnaise, garlic, lemon juice, smoked paprika, and cumin in a blender or food processor.
Blend until smooth and creamy, scraping down sides as needed.
Taste and adjust seasoning with salt and pepper.
Transfer to a serving bowl or container. Serve immediately or refrigerate for later use (up to 5 days).
