Ingredients

  • 1 large red bell pepper
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • Salt and pepper to taste

Instructions

  • Cut red bell pepper in half, remove seeds and stem, and slice into thin strips.
  • Combine red bell pepper, sour cream, mayonnaise, garlic, lemon juice, smoked paprika, and cumin in a blender or food processor.
  • Blend until smooth and creamy, scraping down sides as needed.
  • Taste and adjust seasoning with salt and pepper.
  • Transfer to a serving bowl or container. Serve immediately or refrigerate for later use (up to 5 days).
