Breakfast Beef and Egg Scramble

Ingredients

  • 1 lb ground beef
  • 8 large eggs
  • ½ cup diced onion
  • ½ cup diced bell pepper any color
  • ½ cup shredded cheddar cheese
  • ½ cup chopped fresh cilantro optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil or butter

Instructions

  • In a large skillet, heat the olive oil or butter over medium heat. Add the diced onion and bell pepper, and cook for 3-4 minutes until they begin to soften.
  • Add the ground beef to the skillet, breaking it up with a spatula as it cooks. Cook the beef for 5-7 minutes, or until it is browned and cooked through. Season with salt and black pepper.
  • While the beef is cooking, crack the eggs into a mixing bowl and whisk them together with a fork or whisk until well combined.
  • Once the beef is cooked, pour the whisked eggs into the skillet with the beef mixture. Gently stir the eggs and beef together, allowing the eggs to cook and scramble with the beef. Cook for 3-4 minutes, or until the eggs are fully cooked.
  • Remove the skillet from the heat and sprinkle the shredded cheddar cheese over the top of the beef and egg scramble. Allow the cheese to melt for 1-2 minutes.
  • If desired, garnish the scramble with chopped fresh cilantro before serving. Enjoy your delicious breakfast beef and eggs scramble with toast or as a filling for breakfast burritos!
