Ingredients

  • 4 cups cooked white rice day-old
  • 1 lb chicken diced
  • ¼ cup soy sauce
  • ¼ cup white vinegar
  • ½ cup water
  • 3 cloves garlic minced
  • 1 medium onion chopped
  • ½ tsp ground black pepper
  • ½ tsp salt
  • 2 tbsp vegetable oil
  • 2 eggs beaten
  • 2 green onions chopped (optional)
  • ¼ cup chopped cilantro optional

Instructions

  • Mix chicken, soy sauce, vinegar, water, garlic, onion, pepper, and salt in a bowl. Marinate for 10 minutes.
  • Heat 1 tbsp oil in a skillet or wok. Cook chicken with marinade for 10-12 minutes. Set aside.
  • Heat 1 tbsp oil in the same skillet. Scramble eggs and set aside.
  • Stir-fry rice in the skillet for 2-3 minutes.
  • Add chicken and sauce to the rice. Stir well.
  • Incorporate scrambled eggs into the rice.
  • Cook for 2-3 more minutes.
  • Garnish with green onions and cilantro (optional).
