- 4 cups cooked white rice day-old
- 1 lb chicken diced
- ¼ cup soy sauce
- ¼ cup white vinegar
- ½ cup water
- 3 cloves garlic minced
- 1 medium onion chopped
- ½ tsp ground black pepper
- ½ tsp salt
- 2 tbsp vegetable oil
- 2 eggs beaten
- 2 green onions chopped (optional)
- ¼ cup chopped cilantro optional
Mix chicken, soy sauce, vinegar, water, garlic, onion, pepper, and salt in a bowl. Marinate for 10 minutes.
Heat 1 tbsp oil in a skillet or wok. Cook chicken with marinade for 10-12 minutes. Set aside.
Heat 1 tbsp oil in the same skillet. Scramble eggs and set aside.
Stir-fry rice in the skillet for 2-3 minutes.
Add chicken and sauce to the rice. Stir well.
Incorporate scrambled eggs into the rice.
Cook for 2-3 more minutes.
Garnish with green onions and cilantro (optional).
