Watermelon Poké
- 150 g watermelon cut into cubes
- 30 ml soy sauce or tamari
- 15 ml rice vinegar
- 15 ml sesame oil
- 20 ml maple syrup
- 10 ml lemon juice
- 1 clove of minced garlic
- 1 scallion sliced
- 8 g sesame seeds white and black
Bowl
- 250 g cooked rice
- 1 avocado sliced lengthwise
- 2-3 red radishes sliced
- 1 carrot peeled lengthwise or grated
- 25 g edamame beans steamed
- A handful of parsley leaves
- 8 g sesame seeds white and black
- 1-2 lime wedges
Instructions
- Make a marinade for the watermelon by combining soy sauce, vinegar, sesame oil, maple syrup, lemon juice, minced garlic, sliced scallion and sesame seeds in a bowl.
- To prepare the watermelon poké, add watermelon slices in a big bowl or a zip log bag, along with the prepared marinade. Mix well and seal or cover.
- Let this marinate in the refrigerator for 3-4 hours or overnight.
- Once the watermelon poké is ready, assemble the bowl by adding cooked rice to the bottom.
- Then, on the top add watermelon poké along with other toppings like avocado, carrot, red radishes, edamame, parsley leaves, lime wedges. Sprinkle sesame seeds on top.

Substitutions & Shortcuts
- The best type of rice for this bowl is sushi rice. But any kind of white rice will work.
- You can add a number of other toppings and garnishes to this bowl, like pickled ginger, microgreens, nori, jalapeño, roasted peanuts etc.
- To add more depth of flavour in this bowl drizzle some sriracha sauce or wasabi mayo (30ml mayo + 3ml wasabi) on top.
