  • 200 grams cake or all purpose flour
  • 50 grams icing sugar
  • ½ tsp baking powder
  • 30 grams soft butter
  • 1 egg
  • 1 egg yolk
  • 1 tbsp rum
  • zest of 1 orange
  • pinch of salt
  • 4 tbsp water
  • oil for frying


  • In a small bowl combine the flour with the icing sugar and baking powder.
  • Add the salt and mix well.
  • Add the butter, eggs, egg yolk, rum and orange zest.
  • Mix well then add 1 tbsp of water at a time until a firm dough forms.
  • Flatten to dough on a floured counter to a thickness of 5 mm.
  • Cut the dough into rectangles, and with a knife make a cut in the center of each rectangle.
  • Thread a corner inside the slit and stretch gently. Twist into shape.
  • Heat the oil in a deep pan at 350 degrees.
  • Fry the pastries for 2 minutes until golden brown.
  • Remove from the oil and sprinkle with icing sugar. Serve!

These are not the typical calzones which are dough turned overs filled with cheese and meat, these are more like small donuts. If you love donuts, you’ll love this cozy Chilean treat that is similar to many types of European fried pastries.

Notes & Tips

  • Fun fact, this translated roughly to “broken underwear” and previously “broken panties”. Despite the not-so-appetizing name, these are very enjoyable for winter and are less heavy than normal donuts due to the smaller size.
  • No oranges? Try this recipe with lemons, you may prefer the aroma more.
  • You can substitute the baking powder with the same amount of dry yeast, but remember that the flavor will change.
