Breakfast is indubitably my favorite meal of the day, and the egg is the clear frontrunner, the top choice for any heart breakfast. Eggs are so versatile, there are so many options to choose from scrambled egg, an omelet, eggs benedict, boiled, poached, fried, sunny-side up, not to mention eggs in French toast or all the other baked goods we use eggs for. The egg is as ubiquitous as it is beloved. It is cheap and one of the healthiest options to get your daily dose of protein and can be consumed by people of all ages.

The biggest drawback of consuming eggs is high cholesterol, resulting in blood pressure and heart issues. While doctors recommend 1.5 to 2 eggs per person per day, one has to keep in mind personal health and cholesterol levels.

Another reason why people are looking for alternatives to eggs is the number of environmental issues large-scale production of eggs causes. Research shows that one person consumes about 160 to 171 eggs per year, if you calculate that with the world population the production and consumption of eggs reach billions. There has been a 24% increase in egg production in just ten years. This not only impacts the climate and environment negatively, but the chicken farm business and factory are not impacting health or the environment in a good way. JUST Egg is an alternative to real eggs that are completely plant-based to negate the impacts made by large-scale egg production. It is also non-GMO, has no harmful pesticides, is packed with protein, and has zero cholesterol.

JUST Egg is plant-based and made predominantly with mung beans. While it is heavily processed, it does have an expiration date and it will go bad. JUST Egg needs to be properly stored and once opened needs to be used up quickly.

JUST Egg needs to be refrigerated as soon as you bring it home, else it will go bad. Once opened use within the next few days.

How Long Does JUST Egg Last?

  • JUST Egg has a shelf life that is not very long
  • JUST Egg is usually found in the refrigerated section in the grocery stores, so ensure you keep the JUST Egg in your fridge as soon as you get it. Once opened the JUST Egg will last in the fridge for about 4 days.
  • The JUST Egg might not go bad immediately after 4 days, but its quality will deteriorate.
  • All bottles of JUST Egg come with an expiry date or sell-by date or both. The sell-by date indicates when the product reaches peak quality, and the expiry date specifies when the product is going to spoil or not viable to eat any longer.
  • An unopened bottle of JUST Egg should be refrigerated and while it is best to go by the date of expiry on the bottle, you can use it for a week or two past its best-by date. The product would not have spoiled yet and will still be consumable, but you will notice a change in quality.
  • It is best to go with the dates given on the package label if ever in doubt.
  • While there has not been any official word on whether JUST Egg can be frozen or not, JUST Egg does freeze well and can be thawed and used.
  • Frozen JUST Egg will last in the freezer for about 2-3 months.

How Best To Store JUST Egg?

  • The first thing to do when you get JUST Egg is to put it in the fridge
  • Keeping it at a cold temperature stunts decay and spoilage, so if you want your JUST Egg to last a long time, make sure you refrigerate it immediately.
  • You can keep it in the container it comes in, just always keep the lid tightly closed.
  • If for any reason you need to transfer the JUST Egg into another container, it should be an airtight container.
  • If the JUST Egg is left open or exposed to air and external elements, higher chance of it spoiling.
  • Once you open the JUST Egg it needs to be consumed within 4 days, and since that is not always possible, a good option is to freeze it to make it last longer.
  • Once frozen, the JUST Egg will stay good for about 2-3 months.
  • To freeze the JUST Egg, first, divide it out into usable portions. 3 tablespoons of JUST Egg is equal to 1 egg, so portion it out according to how you are going to use it. If you freeze it all together, you’ll have to thaw the whole batch even if you are not going to use all of it.
  • Once you freeze and thaw JUST Egg it is not recommended to refreeze it. Thawed JUST Egg will already have compromised taste and texture and the more you refreeze and thaw it the more you would have compromised the quality of the JUST Egg.
  • The best way to freeze JUST Egg is to pour the JUST Egg into an ice cube tray and freeze it. Once frozen transfer the JUST Egg cubes into a freezer-friendly bag or pouch.

How To Tell If Your JUST Egg Has Spoiled?

  • Although JUST Egg is processed and has additives to extend its shelf life, it is organic and plant-based, hence susceptible to spoilage.
  • If you at all suspect that your JUST Egg has spoiled, do not consume it, discard it instead, even if it is well within its expiry date. It is better to be safe and tread on the side of caution.
  • The first thing to look for if you suspect spoilage, is the smell. If your JUST Egg smells overwhelmingly pungent, sour, or off then it has gone bad.
  • If you see any distinct discoloration on the JUST Egg, then throw it out. JUST Egg should have a mild, yellow color, if it is gray or dark then it has gone bad.
  • If you see mold or any type of growth on the JUST Egg then definitely do not consume it. Eating spoiled JUST Egg will give you food poisoning including but not limited to diarrhea, vomiting, nausea, fever, and chills.
  • Uncooked JUST Egg should have a thick liquid consistency, while cooked JUST Egg has the texture of eggs. If your JUST Egg is hard, rubbery, or chewy then it is old and spoiled.
  • Finally, the taste. JUST Egg should taste like eggs if instead, it is bitter or pungent then it has gone bad.

JUST Egg is a great alternative for those looking to eat more plant-based food, avoid animal products, or just want to be more mindful of climate change. If you are just testing out a new food lifestyle then JUST Egg is a great place to start.
