Like Chipotle and other Mexican restaurants, Qdoba lets you build your own bowls, burritos, or tacos depending on your preferences. Luckily, there are lots of vegan-friendly options for tortillas and shells, including:

Luckily, Qdoba has several vegan-friendly bases, including brown or cilantro-lime rice, black or pinto beans, and the Impossible Meat Crumble. Unfortunately, Qdoba doesn’t offer any refried beans at the time of this writing. But this may just be due to supply chain issues from COVID-19; we hope to see refried beans return to the menu sometime in the near future.

Even better, Qdoba lets you add most of these toppings to all of its main dishes. You may have to pay a few extra cents, but that’s a small price to pay for unlimited customization.

For starters, try out Qdoba’s Burrito, which comes either wrapped or as a bowl. You can choose the Impossible Meat for your protein, then choose between a bowl, a flour tortilla, or a crunchy tortilla. You’ll also have the option to choose cilantro or brown rice, then from a variety of beans. All in all, you’ll be able to construct the perfect burrito according to your tastes or preferences in just a couple of minutes. There’s also often enough food included for two meals depending on the size of your stomach!

Or you could try the Loaded Tortilla Soup. This dish also works well with the Impossible Meat, and you can choose from a crunchy tortilla shell or bowl to start things off. Then choose your rice, your beans, and any sauces or salsas you want to add – don’t forget that practically all of the add-ons mentioned above can be mixed with Qdoba’s main meals for free or very low additional cost.
