Ingredients

  • 100 g cream cheese
  • 50 grams sugar
  • 50 ml milk
  • 100 ml whipping cream
  • Pinch of salt

Instructions

  • In a medium bowl, whisk the cream cheese, sugar, and a pinch of salt until creamy. Scrape the sides of the bowl as needed.
  • Add half of the milk and whisk until combined. Then add the other half and whisk it thoroughly. Place the cream cheese mixture in the fridge to set.
  • In a separate bowl, use the milk frother or the cleaned and dried hand mixer/whisk to beat the whipped cream until you reach soft peaks. Don’t over-whip it since we will beat it together with the cheese later.
  • Once you’ve achieved soft peaks, pour the whipped cream into the cream cheese mixture and whisk together until you reach a thick consistency.
  • Use cheese foam on top of iced boba tea, milk tea, jasmine tea, coffee, or any cold drink of your choice. Enjoy fresh or keep in the fridge for up to 5 days!

If you’ve never tried cheese foam, think of cheesecake but it’s lighter and drinkable. Just like salted caramel or cheese with jam or honey, the sweet and salty combo is a guaranteed flavorgasm.

There are many ways to make cheese foam and I’ll be sharing some variations below. Cheese foam can be made with condensed milk and evaporated milk, it can be made with fresh cream cheese or cheese powder, and it can even be made vegan. 

But this simple cheese foam recipe calls for:

  • 100 g cream cheese
  • 50 grams sugar
  • 50 ml milk
  • 100 ml whipping cream 
  • Pinch of salt

There are also a few pieces of equipment you should have at hand: 

  • A digital scale
  • Whisk or hand mixer
  • Milk frother (optional)

How To Make Fluffy Cheese Foam?

Step 1: Make the cheese mixture

In a medium bowl, whisk the cream cheese, sugar, and a pinch of salt until creamy. Scrape the sides of the bowl as needed.

Add half of the milk and whisk until combined. Then add the other half and whisk it thoroughly. Place the cream cheese mixture in the fridge to set.

Step 2: Whisk the whipped cream

In a separate bowl, use a milk frother or clean, dried hand mixer to beat the whipped cream until you reach soft peaks.

Don’t over-whip it since we will later beat it into thicker peaks together with the cream cheese mixture.

Step 3: Combine and whisk to perfection

Once you’ve achieved soft peaks, pour the whipped cream into the cream cheese mixture and whisk together until you reach a thick consistency. 

This takes quite a bit of wrist power so I recommend using an electric hand mixer to speed up the job and provide your wrist with some relief.

How Do You Drink Cheese Foam Tea?

Traditionally, you drink boba tea through a large straw to slurp up all the boba. But cheese tea is better enjoyed straight from the cup so that you can get a bit of cheese foam along with every sip. 

You can also use a straw and simply slide it higher up to get a good slurp of cheese foam. This way you’ll avoid that cheese mustache that often accompanies the enjoyment of cheese tea.

You may be wondering, what is cheese foam best with? I love how it tastes on top of jasmine tea with a generous amount of mango or strawberry nectar, some tapioca boba, and egg custard pieces. But that’s just one combo from a bubble tea place I fell in love with.

Generally, I recommend serving cheese foam on top of cold beverages, rather than hot ones. This will prevent the cheese foam from melting and if you add ice, it’ll also keep it floating at the top.

A classic combination is brown sugar milk tea with tapioca boba and cheese foam on top. You can even make tapioca boba at home or order some from Amazon.

Any loose-leaf tea will be elevated with cheese foam on top. Just make sure you use the right temperature water and steep the tea to your liking. Each type of tea requires a different temperature and steeping time to get the perfect flavor bouquet.

How To Make Cheese Foam Without Whipping Cream

The cheese foam may not turn out as fluffy, but you’ll still get a creamy luscious result. You can also use sour cream instead of cream cheese, but the flavor won’t be the same.

Street food vendors in Asia usually use powdered cheese instead of fresh cream cheese to make the foam since it’s cheaper. You can find cheese foam powder or cheese tea powder online. 

How To Make Vegan Cheese Foam

Although most of the ingredients in fluffy cheese foam are made from dairy, you can easily tweak it to fit your dietary needs. 

For the cream cheese, use silken tofu instead. Or make vegan cream cheese at home using cashew nuts. It’s pretty simple.

For the whipping cream, you can use a non-dairy creamer or coconut milk. Just make sure to use the fatty part at the top of the can and save the coconut water for smoothies.

As for the milk, you can use any plant-based milk instead. Unsweetened varieties are best since they won’t alter the flavor of the foam too much. And voila, you have vegan cheese foam ready to go!
