Ingredients

  • 4 chopped bacon strips
  • 1 minced jalapeño
  • ¼ diced yellow onion
  • 1 diced fresh tomato
  • 6 eggs
  • 1/8 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  • All ingredients ready? Let's begin!
  • Fry the bacon in a skillet until crispy then remove it.
  • Drain all but 1 tablespoon of the grease.
  • Now add the tomato, jalapeño and onion.
  • Grind in some salt and black pepper.
  • Cook for about 4 minutes over a moderate heat, stirring often.
  • Whisk the eggs with salt, pepper and cumin.
  • Turn the heat down and pour the eggs into the skillet.
  • Put the bacon back in there too.
  • Cook, stirring often, for about 3 minutes or until the eggs are cooked to your liking.
  • Serve with salsa and warm tortillas.

Bacon and eggs always make a satisfying breakfast or brunch, but not everyone has tried Mexican-style bacon and eggs, or huevos con tocino as this dish is also known. 

‘Huevos’ means eggs while ‘tocino’ means bacon. This tasty dish also includes tomatoes, jalapeños and onion. Everything is mixed together in the pan. Regular bacon (not Canadian bacon) is the most authentic choice and you might also like to swap the jalapeño for a serrano chili if you want a spicier dish.

Eggs are a healthy breakfast option. They can raise HDL (the good type of cholesterol) and are rich in protein. If you want to cut down the fat, you could use turkey bacon in place of the regular bacon. This isn’t as authentic, of course.

Tweaks & Variations

There are different ways to make Mexican-style bacon and eggs. You might like to swap the 6 eggs for 12 egg whites, or use green onions instead of a yellow one. Feel free to increase the heat by adding a second jalapeño or even a serrano pepper. For a milder result, add roasted poblano instead of the spicier options or even roasted bell peppers.

Optional ingredients you might like to add or serve on the side include cilantro, avocado slices and shredded cheese such as Mexican blend cheese or Monterey Jack.

If you have any leftovers, you can roll them up in tortillas to make burritos and freeze them. You can grab one from the freezer and microwave it for a minute whenever you want a speedy breakfast on the go!

Notes

  • The bacon should be crispy but take care not to burn it, else this will give the dish a bitter undertone.
  • Huevos con tocino is tasty with your choice of corn or flour tortillas.
